草氨酸鹽草氨酸形成的鹽,含有H

離子。

草氨酸和金屬相應的氫氧化物碳酸鹽反應,可以製備草氨酸鹽,例如:

2 H2NCOCOOH + CoCO3 → (H2NC2O3)2Co + H2O + CO2

過渡金屬的草氨酸鹽對熱穩定性不高,鎳鹽在215℃開始分解,而銅鹽的開始分解的溫度只需165℃。過渡金屬草氨酸鹽在更高溫度分解時,會釋放出劇毒的氣體COHCN[1]
