肉冻 (aspic) 是一种菜肴,做法是将清汤加工为类似果冻的形状,并在其中镶入肉块、蔬菜、水果等食物。肉冻和中餐水晶肴肉的做法相似。肉冻的详细配方在中世纪时就已经出现[1]。20世纪初期,肉冻开始在美国流行[2]:514
